Simbiosis entre sala y cocina

Absinthium es uno de los restaurantes de referencia de Zaragoza, por más que gran parte de clientela provenga allende del Ebro. Lo que al principio pudiera parecer un hándicap, su ubicación en la primera planta de un hotel, el Oriente, le confiere un carácter como clandestino, reservado a los connaisseurs. Porque sí, es un restaurante para conocedores, para aficionados capaces de entender la complejidad que esconde lo aparentemente sencillo, lo exclusivo de algunas materias primas, la temporalidad de la mayoría de ellas –incluso la carne sabe diferente según las estaciones– y que la bebida no es un mero complemento de la comida, interacciona potentemente con ella, la modifica y la ensalza, de la misma forma que podría cargarse el mejor plato. No es un peligro en el Absinthium. La maestría ante lo líquido del sumiller y socio, Jesús Solanas, se alía con la forma magistral de entender la cocina de la otra parte, Roberto Alfaro, tan eficaz, como amable y humilde.

No dispone Absinthium de una amplia carta, ni falta que le hace. La pizarra móvil informa al comensal de las propuestas cotidianas, donde no suele faltar una pasta –ñoquis con borrajas y anguila kabayaki– ni una verdura de temporada, espárragos, guisantes. Y se gustan en los postres, elaborando divertimentos, la Tarta al whisky (como la magdalena de Proust), o el clásico reinterpretado Sablé de pistacho con chantilly, fruta y sorbete de temporada. Pero también puede haber una Ostra Rockefeller, el escondido Sot-l’y-Laisse, un pescado fresco  y salvaje a la plancha, Pichón en dos cocciones, polenta, salsifí, bulbo de apio… Y en muchos casos sirven medias raciones, para los más morigerados. Se nota que los dos socios disfrutan con su trabajo, se divierten mucho y trasmiten esa pasión a la clientela. Que, por supuesto, debe dejarse aconsejar a la hora de pedir la bebida, especialmente si gusta de disfrutar de experiencias diferentes, o descubrir el único sherrybar de la ciudad.

Symbiosis between dining hall and kitchen

Absinthium is one of the reference restaurants in Saragossa, although most of its customers come from beyond the Ebro river. What it may seem a nuisance at first— its location on the first floor of the Hotel Oriente, gives the restaurant a sort of a clandestine aura, as if it was kept only for connoisseurs.  Because, yes, it is a restaurant for appreciators, for enthusiasts who are able of understanding the complexity that hides behind what is apparently simple, the exclusivity of some raw materials, the temporality of most of them -even meat tastes differently depending on the season- and that drink is not just a complement to food, powerfully interacting with it modifying and highlighting it in the same way that it could ruin the best dish. It is not a danger in Absinthium. The skill that Jesús Solanas, sommelier and partner, shows when it comes to liquids conjugates with the masterful way of understanding cooking that the other part, Roberto Alfaro, as effective as kind and humble, possesses.

Absinthium does not have a large menu, because it is not needed. The movable board informs the diner about the daily proposals, where a pasta dish -gnocchi with borrajas (starflower) and kabayaki eel- and some seasonal vegetables like asparagus or peas are never missing. And they are keen on desserts, creating amusements like the Whiskey Cake (just like Proust’s Madeleine) or the reinterpretation of the classic Pistachio sables with whipped cream, fruit and seasonal sorbet. But there also may be an Oyster Rockefeller, the hidden Oyster of a bird, a grilled fresh and wild fish, Double Cooked Squab, polenta, salsify, celery bulb… And in most cases, they serve half portions, for those who are more restrained. You can tell that both partners enjoy their jobs, have lots of fun and they instill that passion to their customers who, of course, must allow the advices when the time of ordering the drinks comes, especially if they are keen on enjoying different experiences or discovering the only sherry bar in the city.
